Mother’s Day – Eggs Royale

This Mother’s Day, treat someone special to a breakfast that feels indulgent yet effortless. Our Egg Royale recipe from The Hungry Guest combines perfectly poached eggs, silky smoked salmon, and a rich hollandaise sauce – the ultimate start to a memorable day. Easy to recreate at home, it’s a dish that tastes as luxurious as it looks.

Ingredients:

120-150g smoked salmon
Brioche or English muffins
4 x eggs
White wine vinegar
1 bunch chives

3 x egg yolks
1 tbsp white wine vinegar
100g clarified butter
White pepper and salt

Method:

For the hollandaise:

  1. Place a pan of water on the stove and bring to the boil. Then reduce to a simmer.
  2. Add the egg yolks and vinegar to a bowl and place the bowl on top of the pan of hot water.
  3. Whisk the yolks continuously until the mix becomes light and aeriated.
  4. Remove from the heat and slowly whisk in the clarified butter.
  5. Season with salt and pepper.

Poaching eggs:

  1. Bring a tall pan of water to the boil.
  2. Add 2 tbsp of white wine vinegar to the pan and reduce to a simmer.
  3. Crack all four eggs into individual ramekins.
  4. Pour each egg in separately and cook for 4 minutes.
  5. Remove with a slotted spoon and place on paper towel.

To assemble:

  1. Toast the brioche.
  2. Layer the smoked salmon on the brioche.
  3. Top with poached eggs and a generous spooning of hollandaise.
  4. Finish with chopped chives.

Serves: 2
